Brigadeiro Cake

Tomorrow is Father’s Day and today I made a simple, but very delicious chocolate cake with brigadeiro for my husband. 
Brigadeiro is a super famous Brazilian candy. In Brazil most of the celebrations have brigadeiro or brigadeiro cake. 

My husband is American and he loves chocolate. So when I (A Brazilian girl) introduced brigadeiro to him, his reaction was: “wow! I love this candy! It’s a little bit like chocolate fudge but also a little bit like a truffle, however it is unique! ” 

And that’s right! Brigadeiro is unique. But it is so easy to make. 

Chocolate cake with brigadeiro is an easy yet delightful dessert for any chocolate fans!

The cake is a simple chocolate cake that I actually baked it in a small cake pan, since it’s just me, my husband and my son at home tomorrow. But if you would rather serve this cake for a crowd, please double the recipe.

Ingredients cake:

4 tablespoons (57 grams) coconut oil or butter (soft) – I really like coconut oil 

1/2 cup (100 grams) granulated sugar 

1 large egg at room temperature 

1 teaspoon pure vanilla extract 

1/4 teaspoon salt 

3/4 cup (90 grams) cake flour 

1/3 cup (30 grams) unsweetened cocoa powder 

1 teaspoon baking powder 

1/2 teaspoon baking soda 

1/2 cup (120 ml) buttermilk 


Instructions:

1. Preheat oven to 350F/180C. 

2. Grease an 8-inch round cake pan and line bottom and sides with parchment paper. Set aside. 

3. In a medium bowl, sift flour, baking powder, baking soda and cocoa powder. Add salt. Set aside. 

4. In a large bowl add coconut milk and sugar and beat with an electric mixer until creamy. About 2 minutes. 


5. Add the egg and beat for another minute. Add vanilla extract and beat until incorporated. 


6. Add half of the dry ingredients and beat on low speed until combined. About a minute or so. 

7. Add buttermilk and continue beating on low. 


8. Add remaining dry ingredients and beat until combined. 


9. Place cake batter into prepared pan and bake for 16-18 minutes or until toothpick inserted comes out clean. 



10. Let the cake cool in pan for 10 minutes before removing it to a cooling rack. 

11. Let cake cool completely. About 1 hour or so. 

12. Cut cake in half and place cake on a serving platter. Spread half of brigadeiro while it still hot.

13. Cover with the other half of the cake and spread the remaining brigadeiro all over the cake. The brigadeiro must be hot for easy spreading. 



14. Decorate with chocolate sprinkles. 

**kids are welcome to help 😉…. well, if they don’t eat all the sprinkles first, lol!!! 


15. Let the brigadeiro set before cutting the cake and serving.

1 can (397 grams) sweetened condensed milk 

1 tablespoon butter

4 tablespoons unsweetened cocoa powder 

In a medium saucepan, add all ingredients and stir constantly over a medium heat. Keep stirring until it’s thick and you can see the bottom of your pan. 

Use brigadeiro immediately on the cake. 

**to roll out brigadeiro: let it cool completely, then grease your hands with butter. Make 1 inch size balls and cover with chocolate sprinkles.
