Vanilla Cake with strawberries and cream
What not to love about this cake? It is a super light and moist vanilla cake, with fresh strawberries and fresh whipped cream! A kind of a classic cake for me. 

It is a perfect gift for you to surprise your mom on Mother’s Day, don’t you agree? 

My mom lives far away from me, but if she lived closer I would for sure, give her this cake on Mother’s Day.

I am super fan of homemade gifts, especially the edible ones. Homemade gifts show your personality and show to the person you really care about her, taking the time to do something special for her. 


In fact, this is a simple cake, which requires only a few ingredients. Take a look at the recipe and the steps below.

Cake Ingredients:

1 1/2 cup (170 grams) self rising flour

1 cup (200 grams) sugar

3 eggs

 pinch of salt

1 teaspoon vanilla extract

3 tablespoons (40 grams) melted coconut oil or vegetable oil

1/4 cup (60 ml) milk

1/3 cup (80 ml) water

Cream ingredients:

1 1/2 cup (360 ml) heavy cream or whipping cream

4 tablespoons sugar

1 teaspoon vanilla extract

And: 

400 grams fresh strawberries washed and dried on paper towels.

Instructions:

1. Preheat the oven to 350F/ 180C.

2. Butter bottom and side of a 9-inch (23 cm) round cake pan, sprinkle with flour. Tap to remove the excess. 

3. Beat egg whites in a large bowl with an electric mixer on high speed. Add the egg yolks and beat well.

4. Place the sugar and beat at medium speed for about 1 minute.

5. Add the vanilla, salt and oil and continue to beat at medium speed until it mixes.


6. Switch to low speed and with the mixer still on, add the milk and water and mix only until combined. Do not beat this step for too long or the cake will not be soft. 


7. Remove the bowl from the mixer and pour in the sifted flour. Mix gently with a silicone spatula.



8. Place batter in the prepared pan and bake for about 30 minutes, or until golden brown and toothpick inserted comes out clean.



9. Let the cake cool in the pan for 15 minutes before removing it . Allow the cake to cool completely before cutting and filling. 



10. Cut the strawberries in half. Leave some strawberries to decorate the cake, if you like.

11. Beat the heavy cream, sugar and vanilla at high speed until medium to stiff peaks form. About 2 minutes. 


12. Cut the cake in half and spread some of the cream. Arrange the sliced strawberries and top with the other half of the cake. 





Spread the remaining cream on top and sides of the cake. Garnish with strawberries.



13. Refrigerate for at least 1 hour before serving.
