Honey Cake with Dark Chocolate Coating 

This cake is very easy to make. I actually shared a similar recipe on Valentine’s Day, when I made this cake and cut using a heart shaped cookie cutter. But then, I made a sandwich out of the hearts and used dulce de leche as a filling. Now this is just the cake, that I cut using a mini bunny shaped cookie cutter and a mini flower. As I mentioned before, In Brasil we call it “pão de mel”. It is very popular among adults and children. And I love this cake so much! All the spices involved in this recipe, just give this cake an exquisite taste. The dark chocolate coating will give the final touch. Hope you like this recipe!

Ingredients:

1/4 cup (85 grams) honey

1/2 cup (100 grams) dark brown sugar

1 egg

2 tablespoons canola oil

3/4 cup (180 ml) milk

1 cup (120 grams) all-purpose flour

1/4 cup (21 grams) unsweetened cocoa powder

1 teaspoon cinnamon

1/2 teaspoon ground cloves

1/4 teaspoon ground nutmeg

1/4 teaspoon ground ginger

1/4 teaspoon salt

1/2 teaspoon baking powder

Instructions:

* Preheat oven to 350F/180C.

* Grease and flour a 9×13 cookie sheet. This will give you a thin cake. Or use a 9×9 inch cake pan for a thicker cake. Then line with parchment paper.


* In a medium bowl whisk the egg, add honey, brown sugar, and whisk.

* Add oil and milk and stir very well until all ingredients have been incorporated.


* In a large bowl add flour, cocoa powder, cinnamon, nutmeg, cloves, ginger and salt and whisk.


* Pour the wet mixture over the dry mixture and stir using a wooden spoon.


* Add baking powder last. Stir just until combined. Do not over mix.

* Place batter in prepared pan.

* Bake for 18-20 minutes depending on the size of the pan, or until a toothpick inserted comes out clean.


* Let it cool in the pan for 5-10 minutes before cutting. You can cut using your favorite cookie cutters or cut into squares. 


* Let the pieces cool on a cooling rack to room temperature before dipping in melted chocolate. 

* Dip the cut cakes in melted dark chocolate (following instructions of the package) and place it onto a parchment paper.


* Let chocolate harden completely at room temperature. About 1 hour.
