Honey Cake with Dulce de Leche filling and Dark Chocolate Coating

How beautiful, delicious and lovely are these cakes? I cut them, using a heart shaped cookie cutter, to be a treat for Valentine’s Day. But you can actually use any cookie cutter you like. Or simply cut into squares.

The important part here is the filling and the chocolate coating ❤🍫.

In Brazil, these cakes are very famous. Their name is “pão de mel” which means “honey cake” You can find them just coated in melted chocolate (the most common) or with several different fillings. I think the dulce de leche is the most delicious 😋. But if you translate “pão de mel” you will get “gingerbread” here in the United States. However the texture and consistency is very different from the original American gingerbread.

I know that you can also find a similar cookie/cake in other European countries, like in Germany by the name of Lebkuchen. They have a similar taste. I guess it’s because of all the spices we use to make them. But “pão de mel” doesn’t have orange/lemon peel, or almond flour.

So today, I’ll be sharing my version of the traditional Brazilian Pão de Mel, that I called Honey Cake.

Ingredients:

1/4 cup (85 grams) honey

1/2 cup (100 grams) dark brown sugar

1 egg

2 tablespoons canola oil

3/4 cup (180 ml) milk

1 cup (120 grams) all purpose flour

1/4 cup (21 grams) unsweetened cocoa powder

1 teaspoon cinnamon

1/2 teaspoon ground cloves

1/4 teaspoon ground nutmeg

1/4 teaspoon ground ginger

1/4 teaspoon salt

1/2 teaspoon baking powder

Instructions:

  • Preheat oven to 350F/180C.
  • Grease and flour a 9×13 cookie sheet. Then line with parchment paper.

  • In a large bowl add flour, cocoa powder, cinnamon, nutmeg, cloves, ginger and salt and whisk.

  • In a medium bowl whisk the egg,

  • Add honey, brown sugar, oil and milk and stir very well until all ingredients have been incorporated:

  • Pour the wet mixture over the dry mixture and stir using a wooden spoon.

  • Add baking powder last. Stir just until combined. Do not over mix.

  • Place batter in prepared pan.

  • Bake for 15-18 minutes or until a toothpick inserted comes out clean.

  • Let it cool in the pan for 5-10 minutes before cutting. You can cut using your favorite cookie cutters or cut into squares.

  • It must be a thin cake. So it is easy to cut and layer. Let the pieces cool on a cooling rack to room temperature.
  • Spread dulce de leche on the bottom of each piece.

  • Place other piece on top to make a sandwich. Pressing a little bit, so they stick together.

  • Dip the sandwich cakes in melted dark chocolate (following instructions of the package) and place it onto a parchment paper.

  • Let chocolate harden completely at room temperature. About 1-2 hours.
