Sugar Cookies with Royal Icing for Santa

 

Sugar Cookies

These cookies are so easy to make and they turn out so good. After they are decorated they are so beautiful.
I’m not a good cookie decorator, but I have fun making these cookies. And my son helped me! Christmas baking has been so much fun for us! Santa will be very proud of my little helper. And Santa will also love these sugar cookies 🎅🏻❤

Ingredients:

1 1/2 sticks (12 tablespoons/ 170 grams) soft butter

3/4 cup sugar

1 egg at room temperature

1/2 tablespoon vanilla extract

1/4 cup milk

2 cups all-purpose flour

3/4 teaspoon baking powder

**For royal icing:

2 cups powdered sugar (sifted)

1/4 cup lukewarm water (105F/ 40C)

1 tablespoon meringue powder

1/2 teaspoon vanilla extract

*Optional: Food coloring of your choice

Instructions:

  • In a bowl of an electric mixer, add butter and sugar and mix until ingredients are combined.
  • Add egg and vanilla and mix.
  • Add half of the flour, baking powder and milk, and mix at lowest speed.
  • Add remaining flour and continue mixing at low speed. Do not over mix.
  • Wrap dough in plastic wrap.
  • Refrigerate for 30 minutes.

  • Preheat oven to 325F/ 165C.
  • Line a cookie sheet with parchment paper or silicone baking mat.
  • Roll out dough on a floured surface to 1/4 inch thick. Cut using your favorite cookie cutters.

** Dip cookie cutter into flour, before cutting, so it doesn’t stick to the dough.

  • Place cookies on a prepared baking sheet.

  • Bake for 8-10 minutes or until lightly browned. Do not over bake.
  • Let the cookies stand in the cookie sheet for 5 minutes before transferring them to a cooling rack.

  • Decorate cookies after they are completely cooled.

Royal icing instructions:

* Place all ingredients in a bowl of an electric mixer. Do not place food coloring yet!

  • Start mixing at low until all ingredients have combined. It will be a pale color.

  • Change speed to high and beat for 10 minutes until it achieves a white and creamy color.

  • Place royal icing into bowls and add the food coloring of your choice.
  • Keep containers with royal icing closed. It dries out very fast.
  • Place icing into piping bags and use small round tips for liners. For example, round tip number 2 or 3 from Wilton.

* After the cookies are decorated, let them dry for at least 1 hour before packing.
