Apple Walnut Bundt Cake with Maple Syrup Glaze

Apple-Walnut Cake

This is a super moist cake with big pieces of apples and also has a little crunch from the walnuts in it.

The simple glaze made with maple syrup takes this cake to an over the top cake! The cake by itself is not too sweet. It’s a perfect accompaniment with a nice cup of hot coffee, espresso, at a tea party, or even better to be served as dessert with the holiday dinner.

I love to cook with apples. You can create so many recipes using apples. During fall and apple season you can have the juiciest apples that are perfect for baking.

Ingredients cake:

3-4 Macintosh or Granny Smith apples or a mix of both diced (about 2 cups of diced apples)

3/4 cup chopped walnuts (more for sprinkling on top of the cake)

6 tablespoons (85 grams ) unsalted butter soft

1 1/2 cup sugar

3 eggs

1/4 tablespoon salt

2 teaspoons ground cinnamon

1 teaspoon ground nutmeg

2 cups self-rising flour

1 cup milk

Ingredients glaze:

3/4 cup powdered sugar

3 tablespoons pure maple syrup

1 teaspoon milk

1/4 tablespoon cinnamon

Instructions cake:

  • Preheat oven to 350oF/180oC.
  • Grease and flour a Bundt cake pan.
  • Sift flour and spices together. Set aside.
  • In a large bowl add butter and sugar and beat with an electric mixer at medium-high speed until fluffy.
  • Add eggs one at a time beating well after each addition.
  • Change speed to low. Add salt and half of the flour mixture.

  • Add half of the milk and beat at the lowest speed.

  • Add remaining flour and milk and beat just until incorporated. Do not over beat!

  • Fold in apples and walnuts.
  • Pour batter into prepared Bundt cake pan.

  • Bake for 50-55 minutes or until an inserted toothpick it comes out clean.

  • Let it cool in the pan for about 15 minutes.
  • Remove from the pan and let the cake cool completely at room temperature before adding glaze.

Prepare glaze:

  • Add all ingredients into a bowl and whisk until smooth.

  • If it is too thin add more powdered sugar. If it is too thick add 1 teaspoon milk.
  • A good glaze is not too thin and not too thick. It has to run smooth from a spoon.
  • Drizzle over the cooled cake.
  • Sprinkle some chopped walnuts for decoration.
