Stuffed Bell Pepper

A lot of people have problems with gluten. Others just want to avoid it.

So, how to cook a beautiful gluten free dish, that looks beautiful, tastes delicious and it is easy to prepare?

I have a good recipe for you today: Stuffed bell peppers. You can use any color bell pepper you like. They are stuffed with long grain brow rice, carrots, tomatoes, onions and organic grass-fed beef and topped with white and yellow cheddar cheese.

Ingredients:

4 bell peppers any color. (I’m using red, green, orange and yellow)

1 cup cooked long grain brown rice

10 oz. organic grass-fed ground beef (I prefer lean ground beef)

1 medium onion

3 garlic cloves

1 tomato diced

1 cup diced carrots

A handful of fresh parsley chopped

Salt and pepper to taste

White and yellow shredded cheddar cheese for topping (I prefer to buy a block of cheese and shred it myself, avoiding any traces of gluten from a bag of shredded cheese )

Olive oil for drizzling

Instructions:

  •  Wash bell peppers and cut the top, don’t toss out the top of peppers.
  • Remove seeds and membranes.
  • Add a little water to the bottom of a deep baking dish (to avoid the peppers from burning the bottom).
  • Place bell peppers in the baking dish.
  • In a large skillet, over medium heat, drizzle some olive oil and cook ground beef until browned. Add onions, garlic, parsley, salt and pepper to taste. Cook for about 1 minute.
  • Add carrots and tomatoes.
  • Let it cook over medium-low heat for 12 minutes.
  • Preheat oven to 350 F (180oC).

*I like to use Lundberg Brown Rice. But it is my personal preference 😊.

  • Stir cooked rice in the ground beef mixture.
  • Stuff the peppers with the mixture…

  • Top with the cheese and drizzle olive oil.

  • Cover with the peppers tops.
  • Cover baking dish with aluminum foil.
  • Bake for 25 minutes. Uncover and bake for additional 10-15 minutes until all the cheese has melted and the peppers are tender.

  • Serve while hot along with corn bread or salad.

  1. You wanna know what sucks? Allergies to bell peppers. Yep, just bell peppers. They make my stomach ache, and I taste nothing but bell peppers for days. This looks so dang tasty too!

    I am going to use onions instead of peppers I think. Perhaps some Hungarian sweet peppers, Or Anaheim peppers…..
