Pumpkin chocolate chip muffins with cream cheese frosting for Halloween 👻

Spice it up your Halloween party with this adorable muffin/cupcake decorated with pumpkin sprinkles and a marshmallow ghost 👻 on top.

This recipe is for muffins but my son called them cupcakes because I frosted and decorated them.

They are so easy to make and so incredibly delicious. Grownups and kids will love them, and I’m sure if you bake them for your Halloween party you won’t have leftovers.

Ingredients:

1 cup pumpkin purée

1/2 cup + 2 tablespoons brown sugar

2 eggs

1/3 cup coconut oil (melted and cooled) or canola oil

1/4 cup milk

1 1/2 cup all-purpose flour

1 teaspoon baking powder

3/4 teaspoon baking soda

1/4 teaspoon salt

*1 1/2 teaspoon cinnamon

*1/2 teaspoon nutmeg

*1/2 teaspoon ground cloves

*1/4 teaspoon ground ginger

*OR you can use 1/2 teaspoon cinnamon +1/2 teaspoon pumpkin pie spice

1/2 cup semi-sweet chocolate chip

  • Preheat oven to 350F (180C).
  • Line a standard muffin tin with 12 paper liners and a mini muffin tin with 5 paper liners.
  • In a medium bowl add flour, baking powder, baking soda, salt and spices. Whisk it and set aside.

  • In a large bowl lightly beat the eggs (my son is helping me 😊 ).

  • Add oil, milk and pumpkin purée and beat by hand using a whisk.
  • Add brown sugar and beat until incorporated.
  • Add flour mixture to the wet mixture and stir just until moistened.
  • Stir in chocolate chip using a wooden spoon.

  • Take the muffin tin, and fill each cup, 3/4 of the way.

  • Bake for about 20 minutes or until inserted tooth pick it come out clean.

  • Let them cool on a cooling rack before frosting. Or you can eat them just like that 😋.

Pumpkin chocolate chip muffins

**Cream cheese frosting:

1/2 cup (4oz/ 113 grams) cream cheese room temperature

4 tablespoons butter (2oz/ 56grams) soft

2 cups powdered sugar sifted

1 1/2 teaspoon vanilla extract

  • Add all ingredients in a bowl and using an electric mixer, beat at medium height speed for 1 minute.

    ** Frost muffins/cupcakes when they are cooled.

    ** Decorate as desired. I used pumpkin sprinkles and a marshmallow ghost:

** These muffins are so delicious!!! You must try this recipe 😊. Just in time for Halloween 👻👻👻.

**keep frosted muffins/cupcakes in the refrigerator until ready to serve, because of the cream cheese frosting.

**Tip: take them out of refrigerator at least 1 hour before serving, so the frosting can get to room temperature and the muffins will be softer.
