Cookies Two Ways: Mini chocolate chip and White Chocolate macadamia cookies

Mini Chocolate Chip Cookies and White Chocolate Macadamia Nut Cookies! They are my version of Cookie two ways. These cookies are delicious and the dough is very versatile. With the same dough you can create two different cookies.

After I made the cookie dough, I split it in two. Then with one part of the dough I stirred in mini semi-sweet chocolate chips, and the other part mixed in white chocolate and macadamia nuts.

The mini chocolate chip cookies are perfect for little kids to have in their lunch box or as a snack at home. I used mini chocolate chips to be perfectly small.

The white chocolate and macadamia nut cookies are just as good as the little ones, but bigger and full of delicious macadamia nuts that combined with white chocolate are incredibly tasty. I did not use semi-sweet chocolate chips in this one, however if you’d like to add them in the dough is totally up to you.

Here is the recipe and how I did:

Ingredients:

1 stick (4oz/113grams) butter melted and cooled

2 tablespoons coconut oil

1/2 cup lightly packed brown sugar

1/2 cup unrefined sugar

2 eggs at room temperature

1 1/2 teaspoon vanilla extract

1 cup +3 tablespoons all-purpose flour

1/2 cup whole wheat flour

1 teaspoon baking soda

1 teaspoon corn starch

1/4 teaspoon salt

1/2 cup mini semi sweet chocolate chips

1/2 cup white chocolate chips

1/3 cup chopped macadamia nuts

Instructions :

  • Preheat oven to 325 F (175C).
  • Line a cookie sheet with parchment or nonstick aluminum foil. Set aside.
  • In a medium bowl, add all-purpose flour, whole wheat flour, corn starch, baking soda and salt. Whisk and set aside.

  • Using an electric mixer, beat butter, oil and sugars for 1 minute at medium high speed.

  • Add eggs one at the time and beat for 30 seconds.
  • Add vanilla extract and beat for 30 seconds
  • Add flour mixture and stir just until combined.
  • Split cookie dough in two parts.
  • Part 1: add mini chocolate chip and stir until incorporated.
  • Part 2: add white chocolate chips and macadamia nuts and stir until combined.
  • Refrigerate dough at least 30 minutes before baking.
  • For the mini chocolate chip cookies, add a teaspoon of cookie dough for each cookie on prepared baking sheet.

  • Bake for about 5 minutes or until edges are browned.

  • For the white chocolate chip and macadamia cookies, add a tablespoon of cookie dough for each cookie on prepared baking sheet.

  • Bake for 7-8 minutes or until edges are browned.

  • Do not over bake cookies otherwise they will be very hard and dry.
  • Let the cookies cool on cooling rack.
