Banana Cake with Streusel Topping

Banana cake with streusel topping.

A very moist cake with a crunchy topping. This cake looks like a coffee crumble cake, but it has a layer of sliced bananas. This layer of bananas will makes the cake super moist.

When I took this cake out of the oven, it was smelling so good. I think it is because the combination of flavors in the streusel: the brown sugar and cinnamon, oats and butter plus banana. All lovely ingredients that when combined and baked smells wonderful.

I’m sure you will love this cake. Serve it for an afternoon coffee or tea or even breakfast.

For me, this is a perfect cake for breakfast 😉.

Ingredients cake:

3-4 ripe bananas sliced

3 eggs

1 cup sugar

1 teaspoon vanilla extract

1/4 cup canola oil or vegetable oil

1 3/4 cup self-rising flour

3/4 cup water +2 tablespoons powdered milk

**ps: if you don’t have powdered milk use:

1/4 cup milk

1/2 cup water

Ingredients streusel:

3/4 cup all-purpose flour

1/2 cup oatmeal

2 tablespoons dark brown sugar

1/4 cup regular or unrefined sugar

2 teaspoons ground cinnamon

5 tablespoons cold butter diced

Instructions:

* Streusel:

Place all ingredients into a medium bowl and mix with a fork until mixture is crumble. Set aside.

*Cake:

  • Preheat oven to 350F.
  • Grease and flour a 9×13- inch cake pan. Set aside.
  •   In a bowl of an electric mixer add egg whites and beat at high speed until soft picks are formed.

  • Add egg yolks and beat well.

  • Add sugar and beat for about 1 minute.

  • Change speed to very low and add vanilla extract, oil, water and milk.
  • Mix flour by hand using a silicone spatula or wooden spoon.

  • Place batter into prepared pan.

  • Add sliced bananas…

….and streusel on top

  • Bake for about 30 minutes or until inserted tooth pick comes out clean.
