Cakey Brownies

Cakey brownies, what is it? A brownie like cake or a cake like brownie!!! It is the best of both 😊.

If you are like me and you like cake brownies, this is the recipe for you. It is the perfect balance between a chocolate cake and a brownie. Not too fudgy (like brownies) and not too soft like a chocolate cake.

My cake brownies have milk chocolate chips and chocolate chunks in them, and it just makes these brownies even more special.

Cakey Brownies

Ingredients:

1 stick of butter melted

1/3 cup canola oil

1 1/3 cup 100% unsweetened cocoa powder (not Dutch processed)

2 cups sugar

4 eggs at room temperature

2 teaspoons vanilla extract

1 tablespoon brewed coffee

Pinch of salt

1 1/3 cup all-purpose flour

1 teaspoon baking powder

1/2 cup milk chocolate chips

1/2 cup semi-sweet chocolate chunks

Instructions:

  • Preheat oven to 350F.
  • Grease and line a 9×9 inch cake pan with parchment paper. For thinner brownies, use a 9×13 inch cake pan.

  • Sift flour and baking powder in a large bowl. Add chocolate chips and chocolate chunks. Set aside.

  • Melt butter in a microwave safe bowl. Let it cool a few minutes. Add oil and mix well.
  • Add cocoa powder and whisk.
  • Add sugar and whisk together.
  • Add eggs one at the time and whisk very well after each addition.

  • Add vanilla extract, coffee and salt.

  • Pour mixture over flour and mix using a wooden spoon, just until combined. Do not over mix.

  • Bake for 30-35 minutes or . Do not over bake, otherwise your brownies will be hard.

  • Let them cool in the pan for at least 1 hour before slicing.
