Easy Chicken Burrito With Refried Beans

Chicken Burrito!!!

Do you want an easy dinner? Burritos are an option for you. I love burritos. But the silly fact about it, is that the first time I had burrito was in the US. I’m from Brazil and we can’t find burritos there, unless you go to a Mexican restaurant. And I never went to one in Brazil.

But I love rice and beans, which is very popular in Brazil. So adding rice and beans, chicken, salsa and lettuce on a flour tortilla, for me, just turned the meal so good and delicious.

Today I’m sharing the way I make my burritos at home.

Easy chicken burrito with refried beans

Ingredients:

2 boneless skinless chicken breasts

4 flour tortillas (burrito size)

1 package of organic refried beans (I used pinto beans in this recipe)

1 cup cooked white rice

1 cup fresh salsa. *you can use store bought or follow my recipe

*Fresh Salsa ingredients:

2 small yellow onions

2 tomatoes

1/2 small green pepper

1  small jalapeño pepper

2 lemons squeezed

A handful of fresh cilantro

*Chicken seasoning:

3 teaspoons paprika

2 teaspoons cumin

1 teaspoon onion powder

1 teaspoon garlic powder

Salt and pepper to taste

*Toppings:

Lettuce of your choice

Sour cream

Cheddar cheese

Instructions:

  • Prepare your white rice

  • Prepare your salsa:
  • Dice tomatoes, onions and jalapeño pepper very small.
  • Take the seeds out of jalapeño pepper if you don’t like too much heat.
  • Dice half of the green pepper *the other half slice thin to use with the chicken.
  • Chop cilantro very small.
  • Add tomatoes, peppers, onions, cilantro, salt and peeper to taste into a bowl.

  • Squeeze 1 lemon, and mix. Set aside.

  • Make the chicken seasoning:

*In a small bowl add paprika, cumin, onion powder and garlic powder, salt and pepper to taste.

  • Pan-sear chicken:

* Cut each chicken breast in half to make 2 thin breast fillets. Rub with the seasoning.

* In a cast iron skillet or any other skillet, add 1/2 tablespoon olive oil and add chicken breast.

*Cook each side of the chicken for about 8 minutes.  Until browned.

*Place chicken on a plate. Let them rest and slice.

* In the skillet add a drizzle of olive oil, some slices of yellow onion and half of the green pepper.

*Sauté for about 2-3 minutes. Squeeze 1 lemon over the onion and green pepper and deglaze the skillet.

*Add sliced chicken breast and some fresh cilantro, turn heat off. Coat the slices of chicken with onions and green peppers.

  • Heat the refried beans.

  • Heat tortilla accordingly to package directions.
  • Built your burrito:
  • Take one tortilla and place a small amount of rice in the center, and frifried beans on top.

  • On top of refried beans, add chicken..

…fresh sliced lettuce, shredded cheddar cheese, fresh salsa and sour cream.

  • Wrap burrito and serve with fresh salsa aside.

* Wrap burrito and serve with fresh salsa aside.
