Fruits on the bottom Cake

Fruit on the bottom cake.

Do you like those yogurts with fruit on the bottom? I do.

Well this cake is just like that, lol!!! You will find juicy and delicious fruits on the bottom of a super moist and soft cake.

This cake is so easy to make and it is delicious. So soft that melts in your mouth. And the fruits will be in the bottom, but not soggy or mushy. They will be a little soft and sweet. And baking it in a cast iron skillet just keeps it extra moist.

Oh, this cake is so good. I can eat the whole cake all by myself.

Ingredients:

4 tablespoons butter room temperature

1 1/4 cup sugar

2 eggs

1 1/2 cups cake flour

3/4 cup (6oz/180ml) coconut milk

1/4 teaspoon salt

1 teaspoon vanilla extract

3/4 tablespoon baking powder

1 banana sliced

1/4 cup fresh blueberries

1/2 cup fresh raspberries

1/2 cup fresh strawberries cut in half

Instructions:

  • Preheat oven to 350F.
  • Grease a 10 inch cast iron skillet with butter.

  • Using an electric mixer beat butter and sugar until soft.
  • Add eggs one at a time and beat well after each addition.
  • Change to low speed and add half of the flour and half of the coconut milk.
  • Add salt and vanilla extract.
  • Add remaining flour and coconut milk and mix just until combined.

  • Add baking powder and fold using a spatula.

  • Place a very thin layer of batter into prepared skillet.
  • Add fruits and sprinkle some sugar (2 teaspoons).
  • Add remaining batter over the fruits.
  • Bake for 30-35 minutes or until toothpick inserted come out clean.

  • The fruits will be soft but not melted on the bottom of your cake.
  • Let it cool at least 15 minutes before slicing to avoid breaking. This cake is extremely soft.
