Flatbread Pizzas (Grilled Chicken and Pesto or Fresh Mozzarella with Reduced Balsamic Vinegar)

Who doesn’t like pizza for dinner? Well, at my place we do!!! 😍

I was at the grocery store another day, and saw those beautiful flatbreads. Then, I thought about making flatbread pizzas. I usually make my pizza dough, but I decided to try the store bought flatbread. And the pizzas turned out pretty good!!!

I prepared 2 options: One pizza with grilled chicken breast and my green pea and basil pesto sauce, click on the link for pesto recipe: Green Pea and Basil Pesto. And the other pizza was prepared with fresh mozzarella, fresh tomatoes and basil, dressed with reduced balsamic vinegar. OH MY GOSH!!! Both options are so good, and so easy to put together!!!

Ingredients for the Flatbread pizza with grilled chicken and pesto:

1 large flat bread (store bought) or you can make homemade. Today I’m using store bought.

1/2 cup green peas and basil pesto. Click for recipe: Green Pea and Basil Pesto

2 chicken breasts (I season with salt, pepper, garlic, onion powder and parsley)

3/4 cup shredded mozzarella cheese

1/4 cup shredded Parmesan cheese

Prepare:

  • Start by seasoning your chicken breasts.

…and grilling it.

  • Let the chicken breast rest for a few minutes and slice in small pieces.
  • Preheat oven to 400F.
  • Drizzle olive oil on the flatbread.
  • Spread pesto sauce.

  • Top with sliced chicken breast

…shredded mozzarella cheese and Parmesan cheese.

  • Bake for 8-10 minutes or until cheeses have melted.
  • Slice and enjoy!!!!

Flatbread Pizza Chicken Pesto

Ingredients:

1 large flat bread (store bought) or you can make homemade.

1/2 cup green peas and basil pesto (recipe on the blog)

2 chicken breast (I season with salt, pepper, garlic, onion powder and parsley)

3/4 cup shredded mozzarella cheese

1/4 cup shredded Parmesan cheese

Prepare:

Now for the Flatbread pizza with Roasted red bell pepper, tomatoes, fresh mozzarella, basil and reduced balsamic vinegar

Ingredients:

1 large flat bread (store bought) or you can make homemade. Today I’m using store bought.
2 tablespoons pizza sauce

1 tomato sliced

1 roasted red bell pepper sliced

8 oz (226 grams) fresh Mozzarella, sliced or pearls “mini balls’. I used mini ones.

A handful of fresh basil leaves

1/2 cup balsamic vinegar

Prepare:

  • Spread pizza sauce on the flatbread.

  • Top with tomatoes, bell peppers, fresh mozzarella and basil.
  • Bake for 8-10 minutes.

* While pizza is banking, place balsamic vinegar in a small saucepan and heat on low heat until reduced in half.

  • After the pizza is baked let it cool for 2-3 minutes before drizzling with reduced balsamic vinegar.

  1. Wow, these look fantastic; makes me want to go out to purchase some Flatbread today.! If I may ask, do you use a homemade Tomato sauce or a store-bought one ? If so, what is the brand ?
