Green Pea and Basil Pesto

Pesto is a delicious sauce that you can enjoy all year round. But for me, pesto is even more special during summer.

I think the reason is because you can have fresh, big leaves of basil, which is an indispensable ingredient, because basil gives the signature  flavor of pesto.

My recipe is a little different than the original. I combined green peas and basil, with walnuts, Parmesan cheese, extra virgin olive oil, sea salt and pepper. My pesto sauce is so good. You can use it with a thicker consistency, as a spread. Or use as a sauce over your favorite pasta. Another idea is to be used as pizza sauce. Mmmmm!

Ingredients:

1 1/2 cup (5.5 oz./ 150 grams) green peas (thawed)

1 cup basil packed (about 1.5 oz.)

1/2 cup shredded Parmesan cheese

2 garlic cloves

1/4 cup ( 0.9 oz./25 grams) walnuts chopped

3/4 teaspoon salt

Freshly ground black pepper to taste

1/2 cup olive oil + more as needed to achieve desired consistency

Prepare:

  • Place garlic and walnuts in a bowl of a food processor and pulse for a few seconds.

  • Add basil and green peas and pulse again for 15-20 seconds.

  • Scrape the sides of the bowl.

  • Slowly add olive oil while pulsing. Pulse for another 15-20 seconds.

  • Add Parmesan cheese and pulse for another 20-30 seconds.

  • Season with salt and pepper.

  • Pulse a few more seconds and scrape the side of the bowl.
  • Look at the consistency of your pesto. You may want to add a tablespoon more of olive oil if you like.

  • Use it as a spread on toast, as a sauce for your pizza or favorite pasta, along with anything else you like.

  • You can store your pesto in an airtight container in the refrigerator for up to 5 days.
