Hi everyone,

The days are getting hotter. Summer is almost here 😊 and I love the summer days ☀!

One of the easiest summer lunches or dinners is pasta salad. And I made this recipe of pasta salad using ricotta cheese instead of mayonnaise. I like mayonnaise, but I chose ricotta cheese because of the nutritional value. Ricotta cheese is a good source of protein and calcium, making this pasta salad healthier for you.

It is so easy to prepare. I also added ham, green peas and corn, and lots of dry herbs, turning this pasta salad into a yummy main dish.

Ingredients:

1/2 lb (225 grams) short cut pasta like gemelli or penne

3/4 cup ricotta cheese

1/2 onion grated

2 teaspoons dry Italian herbs

1 teaspoon dry parsley (you can also use fresh parsley)

1 tablespoon olive oil

1/3 lb (150 grams) low fat ham

1 cup green peas and corn (steam cooked)

Salt and pepper to taste

Prepare:

  • Cook pasta accordingly to package directions. Drain, and drizzle with olive oil. Then place in the refrigerator until cool.
  • Steam peas and corn if you are using frozen ones. You can also use green peas and corn from a can.
  • In a medium bowl, add ricotta cheese, olive oil, onions, dry herbs, salt and pepper.

  • Mix well until creamy. If is too dry, add 1 tablespoon milk or heavy cream, and a drizzle of olive oil. Set aside.

  • Cut ham into small pieces.

  • In a large bowl, add your cold pasta, green peas and corn.

  • Add ham

…And ricotta mixture.

  • Mix well.

  • Garnish with fresh basil, if desire.
  • Serve immediately or keep it in the refrigerator until ready to be served :).
