Strawberry Clafoutis

Fresh juicy strawberries are the face of summer, don’t you think?

At spring and especially summer, I have strawberries every day. They are my favorite berry. Then, I thought of making an easy desert using strawberries. So, why not clafoutis? A delicious and classic French desert, and so easy to make. But of course I have to give a twist on the original recipe.

This time instead of using whole milk, I used organic coconut milk. Also instead of all purpose flour I used corn starch, turning the dish gluten free! Plus, all the ingredients used are organic, making this dish with the highest quality.

Wow, what a change! And the final flavor: a delicate coconut taste combined with those juice strawberries making it an over the top summer desert. I read once that the clafoutis is served all by itself. Just as it is. Warm or cold, it is up to you. The flavor will always be delightful.

Ingredients:

1 cup fresh organic strawberries

1/4 cup heavy cream

3/4 cup organic coconut milk

2 eggs

2 tablespoons corn starch

2 1/2 tablespoons sugar

1/2 teaspoon vanilla extract or coconut extract, if you want more intense coconut flavor.

Prepare:

  • Preheat oven to 350F.
  • Grease 4 small ramekins with butter.

  • Wash the strawberries and cut them lengthwise.
  • Dry them very well with a paper towel.

  • Place all ingredients, except strawberries into a blender or an immersion blender.

  • Blend for 1 minute.

  • Pour batter into the prepared ramekins.

  • Carefully place strawberries on top.

  • Bake for 20-25 minutes or just until set. Do not over bake.

  • Aren’t they beautiful 🙂

  • Serve warm or at room temperature.
  • Sprinkle some powdered sugar if you like. Look at this lovely custard and juice strawberries. So good!!!
