Just want to share this recipe with you. These muffins are easy to make and taste so good. Just a few ingredients and you will have the most moist and amazing orange muffin ever!!!
1 ½ cup all-purpose flour
1 tablespoon corn starch
1 tablespoon baking powder
1 cup sugar
¼ teaspoon salt
1 cup fresh squeezed orange juice (you can use some pulp too)
½ cup canola oil
1 tablespoon orange zest
- Preheat oven at 350F.
- In a large bowl, add all dry ingredients (except sugar).
- In a medium bowl, lightly beat the eggs. Add oil, orange juice, orange zest and sugar and mix well. Pour this mixture over the dry ingredients and fold using a wood spoon, just until combined. Do not overmix the batter.
- Fill muffins liners ¾ of the way and bake for about 20 minutes or just until golden brown.
