Banana upside down Cake with Caramel Sauce

Afternoon coffee: banana upside down cake with caramel sauce!

Today I’ll be sharing another banana dish with you. It’s because I always have ripe bananas at home and I never throw them away 😊.

This banana upside down cake is very moist. And when you turn it upside down, the caramel sauce will run down the sides of the cake and the bananas slices will be caramelized. Oh so good!!!

And I forgot to mention that when this cake is baking, the kitchen smells amazing. This is because it has cinnamon in the batter. Banana, cinnamon and sugar: a perfect combination!!!

Ingredients:

3 ripe bananas (2 bananas sliced and 1 mashed)
1/2 cup coconut oil or canola oil
1/3 cup milk
1 1/4 cup sugar
2 eggs
1 1/2 cup unbleached self rising flour
1 teaspoon ground cinnamon
1/4 teaspoon salt

For caramel sauce:

1 cup sugar
2-3 tablespoons water

*My tip: let the sugar dissolve while you prepare the cake batter. But be careful don’t burn the caramel sauce 😉

  • In a small pan over medium low heat, add sugar and 2 tablespoons water.

  • Stir and let it cook until the sugar has dissolved and turned to a caramel color. You don’t need to stir constantly with a spoon. It is better to move the pan occasionally in a circular motion.
    *if you notice that large clumps of sugar form, add more water, but no more than 1 tablespoon.

Method for cake:

  • Preheat oven to 350oF.
  • Grease a 9 inch round cake pan with butter.
  • In a large pan sift flour, salt and cinnamon.
  • In a medium bowl, lightly whisk the eggs.

  • To the egg, add oil, mashed banana, milk and sugar and whisk well.

  • Pour this mixture over the flour mixture.

  • And stir with a wooden spoon just until combined.

*Assembling:

  • Pour the caramel sauce in the greased cake pan.

  • Add sliced bananas side by side.

*It should have a picture here, but I forgot to take it :-(. My apologies.

  • Add cake batter over the bananas.

  • Bake for about 35-40 minutes or until inserted tooth pick comes out clean.

  • Let the cake cool for at least 15 minutes before removing from pan.
  • Turn the cake upside down on a serving platter.

  • Serve it while is still warm or completely room temperature. It is up to you! I promise you, it will be delicious!
