Brazilian Savory Pancakes

Hi there,

Today I’ll be sharing a delicious dish with you. It is good for lunch or dinner: it is Brazilian savory pancakes!

This dish is quite popular in Brazil. But the pancake batter is nothing like the American pancakes that we have for breakfast. These ones are similar to French crepes. A very thin, soft and delicate pancake filled with savory things like shredded chicken or ham and cheese or ground beef.

In my recipe today, I’ll be showing you how to make the batter and the beef filling. Then you top these delicate pancakes with marinara sauce and mozzarella and Parmesan.

Ingredients batter:

2 cups all-purpose flour

1/2 cup canola oil

1 1/4 cup milk

1 egg

1/2 teaspoon baking powder

1/2 teaspoon salt

2 tablespoons grated Parmesan cheese

Ingredients filling:

1 lb. lean ground beef

1 medium onion diced

3 garlic cloves minced

1/3 cup green olives chopped

2 tablespoons fresh parsley

Salt and pepper to taste

Directions:

  • Place all the batter ingredients into a blender.
  • Beat for 1-2 minutes until all combined. This batter has to be very thin. The consistency is not like the consistency of American pancakes.

  • If you notice that the batter is too thick, then add more milk and blend for a few more seconds.
  • Place a small skillet over medium heat and add a drizzle of olive oil.

  • Add the pancake batter and quickly spread it all to cover the bottom of skillet.
  • Try to make the pancakes as thin as possible. Very similar to the thickness of a French crepe.

  • Turn the pancake to brown the other side.

  • Stack pancakes on a plate.

  • You can fill the pancakes with shredded chicken or ham and cheese or ground beef.

*My recipe today is for ground beef filling:

 

  • In a medium pan, brown lean ground beef, add onions, garlic, salt and pepper and let it cook for 2-3 minutes. Add tomatoes, parsley, olives and let it cook for 8-10 minutes.

*Building the pancakes

  • Preheat oven to 350oF.
  • Place one pancake on a plate. Add the filling (about 2 tablespoons).

  • Roll it. Repeat until all the pancakes are filled.

  • Place the pancakes side by side, in an oven safe dish.

  • Top with marinara sauce, shredded mozzarella and Parmesan.

  • Place in the oven to melt chesses. About 10 minutes.

  • Serve immediately, with rice and green salad.
