Hi there,

Do you like chocolate chip cookies?  Do you like almond butter? If you are like me, and like both, you will love this recipe! These cookies are incredibly tasty and also very easy to prepare. My son and my husband love chocolate chip cookies. I always have to have some cookies at home. Even in my bag as a snack for my son.

This is a healthier version of chocolate chip cookies. They are made with 100% almond butter (no sugar added), organic coconut oil and light brown sugar. I know when you have kids sometimes they just want to eat candies or chocolate, all sweet things, right? But I am trying to make the sweet treats a little bit healthier. Of course, a few times I end up using candies or food coloring. But once and I while, small amounts won’t kill anyone 😉.

Ingredients:

1/2 cup almond butter

2 tablespoons coconut oil

1 cup light brown sugar lightly packed

1 egg

1/4 teaspoon almond extract

1 cup all-purpose flour

Pinch of salt

1/2 teaspoon baking soda

1/2 cup semi sweet mini chocolate chip

Prepare:

  • Preheat oven to 350F.
  • Line a cookie sheet with parchment paper or nonstick aluminum foil.
  • Place sugar, almond butter and coconut oil in a bowl of an electric mixer and beat at medium-high speed for 1 minute.

  • Scrape sides of the bowl and add the egg. Beat for 1 minute. Add almond extract and beat for 1 more minute.

  • Turn the mixer to a low speed and add dry ingredients (flour, salt and baking soda)and mix just until flour is completely incorporated. Do not over mix.Almond butter cook6
  • With your hands form a big ball of dough.

  • Take 1 tablespoonful of dough and roll into a small ball.
  • Place ball of cookie dough on prepared cookie sheet. Lightly press the top of each cookie.
  • Add the mini chocolate chips on top.

*You also can place rolled cookie dough in the freezer for later baking.

*Bake some cookies without the chocolate chips, if you like.

  • Bake for 7-8 minutes or until lightly browned.

  • Transfer to a cooling rack to cool completely.
  • Serve with tea, coffee or milk.
