Sweet Potato Corn bites

Hello everyone,

What is your favorite appetizer? There are so many different appetizers out there. I have a few recipes that are all yummy. But today, I will be sharing the very easy and nutritious sweet potato corn bites with you.

As sweet potatoes are rich in vitamin A and vitamin C, also high in fiber, this appetizer will be a very good option for your kids to eat at lunch or dinner. I also add corn to these bites. So more veggies, right? And even though I pan fried them, they don’t get soaked in oil. The pan fried is just to make the breading more crisp and delicious. Also the sweet taste of the sweet potato makes these bites very special.

But don’t you think that theses bites are super sweet, because they are not! I added some spices and surprisingly the final flavor was a sweet and savory goodness. Try these sweet potatoes corn bites, with my homemade yogurt dipping sauce. You and the kids will love them!!!

Ingredients:

2 large sweet potatoes

1 egg

1/3 cup sweet corn

1 tablespoon corn meal

1/4 cup all-purpose flour

1/2 teaspoon salt

1/4 teaspoon ground nutmeg

1/4 teaspoon garlic powder

1 teaspoon dried onions

1 tablespoon fresh chopped parsley

1 cup plain bread crumbs

Canola oil for frying

Prepare:

  • Cook the potatoes (either by baking or microwaving) and mash with a fork. * I microwaved my sweet potatoes for 5 minutes on high.

  • Put the mashed sweet potatoes into a large bowl.
  • Add the egg, slightly beaten, and all the remaining ingredients.

  • Mix well with a wooden spoon until combined.

  • Place bread crumbs onto a plate.
  • Add 1 tablespoonful of the batter into the bread crumbs.

  • Gently form a small patty (1 ½ inch) with the dough.

  • Bread both sides with the bread crumbs.

  • Heat the oil in a frying pan and fry the sweet potato corn bites for 2 minutes on each side.

  • Serve warm with dipping sauce of your choice.

Ingredients for yogurt dipping sauce:

1/4 cup plain yogurt
1 tablespoon mayo
1/2 teaspoon fresh squeezed lemon juice
1/4 teaspoon dry parsley

In a small bowl, mix all ingredients together, and serve with the sweet potato corn bites. It is also good as a dip for chicken nuggets.

Ps: you can freeze the sweet potato corn bites: place the patties on a baking sheet lined with aluminum foil and freeze overnight. Next day, place patties into a freezer bag and freeze up to 2 months 🙂
