Mini Chocolate Cupcakes for Easter

Hi Everyone,

With Easter around the corner, how about you make some cute mini chocolate cupcakes for your kids? Or even for yourself and some friends?

When you give someone a gift that is made by you, you’re showing twice the love and care for that person. The person will appreciate it so much and they will know that you took time to bake and decorate cupcakes for them.

Anyway, I love mini cupcakes, because not only are they cute, but you can eat 2 of them and not feel guilty that you are eating 2 cupcakes.

So, let’s celebrate Easter with love and chocolate cupcakes 😉.

I hope you enjoy these fun and easy mini chocolate cupcakes.

Ingredients:

6 tablespoons (3oz/ 85 grams) butter room temperature

3/4 cup sugar

1 egg

1 tablespoon fresh brewed coffee

1/2 teaspoon vanilla extract

1 cup unbleached self-rising flour (sifted)

1/3 cup 100% unsweetened cocoa powder (sifted)

1/3 cup whole milk plain yogurt (3oz/ 85 grams)

1/4 cup milk

*1/4 teaspoon salt. I’m not using it in this recipe, because I used salted butter.

To decorate:

*Peeps marshmallow bunnies (color of your choice)

*M&Ms miniature chocolate eggs

Prepare:

  • Preheat oven to 350F.
  • Place mini cupcake liners into a mini cupcake pan.
  • Place butter and sugar into a mixing bowl and beat at medium-high speed until incorporated.
  • Add the egg and beat for 2 minutes at medium-high speed.
  • Add vanilla and coffee.
  • Add half of the flour and yogurt and beat at low speed to combine.

  • Add remaining flour, cocoa powder and milk, and beat just until combined.
  • Using a spatula, scrape the bowl to make sure there are no lumps in the bottom.
  • Place 1 tablespoonful of the batter into lined cupcake pan.

  • Bake for 10-12 minutes.
  • Cool completely before frosting and decorate.

*I decorate the mini cupcakes with my easy buttercream frosting, tinted with green food coloring (to make the grass). I placed the buttercream into a pastry bag, filled with a grass tip #233 from Wilton brand.

*I placed just the head of the marshmallow bunny on top of the cupcake.

*Decorate with some M&Ms miniature Easter eggs.
