Mini Vanilla Cupcakes

Hello everyone!

Delicious and simple to make. This is how I describe these mini vanilla cupcakes.

They are a must have for any party. Their texture is light and moist. That’s because I use sour cream in the batter. This makes all the difference in this recipe. Also I think they are so cute. Bite sized cupcakes!!! And after you decorate them, they are totally adorable. I made these mini cupcakes for my friend’s birthday party. The girls loved them 🙂

Ingredients:

1/2 cup (4 oz/113 grams/ 1 stick) unsalted butter room temperature

1 cup sugar

2 eggs

1 1/2 teaspoon vanilla extract

1 1/2 cup unbleached self-rising flour

1/4 teaspoon salt 

1/2 cup whole milk

1/2 cup sour cream

Prepare:

  • Preheat oven to 350F.
  • Place butter and sugar into a mixing bowl and beat at medium speed until fluffy.cupcake2
  • Add eggs one at the time and beat well.
  • Add vanilla extract and salt.

  • Add half of the flour and the milk. Beat at lower speed.
  • Add the remaining flour and sour cream and mix just until combined. Do not overmix.

  • Place 1 tablespoonful of the batter into lined mini cupcakes pan.

  • Bake for 10-12 minutes or until light golden brown.

  • Cool on a cooling rack before frosting.

Easy buttercream frosting

Ingredients:

1/2 cup (4 oz/113 grams/ 1 stick) unsalted butter room temperature

1 1/2 teaspoons vanilla extract

2 3/4 cups confectioner’s sugar (powdered sugar) sifted

Pinch of salt

2-3 tablespoons milk

Prepare:

  • Place butter and vanilla extract into a mixing bowl, and beat for a minute or so. Add 1 tablespoon milk and beat for 5 minutes.
  • Add sugar and beat at low speed.

  • Start to add milk one tablespoon at the time, until frosting is smooth (if it is too stiff add more milk. If is too loose add more powdered sugar).

** Use any food color you like. I prefer to use gel food coloring, because it is more concentrated.

**To decorate the mini cupcake, I used a light green food coloring. Placed the buttercream into a pastry bag and used a star tip.

**The flowers were made using fondant.

*Don’t you worry, if you do not have a pastry bag and a star tip. You can just spread the buttercream frosting on the mini cupcake using a butter knife. Then, decorate the mini cupcakes with some sprinkles! Just like this:

**Enjoy your mini vanilla cupcakes!!! They taste really good: very moist. The frosting is very light and not too sweet. Don’t you think it is adorable? 🙂

  • Start to add milk one tablespoon at the time, until frosting is smooth (if it is too stiff add more milk. If is too loose add more powdered sugar).

**The frosting can be made in advance and it can be stored in the refrigerator for up 2 weeks.

** Use any food color you like.
