Banana Bread

Hello everyone,

The recipe today is banana bread. The bananas at my house are getting very ripe fast. So I have to do something because I do not like to see food go bad.

In Brazil, this bread will be called banana “cake”, just because it has a cake like texture. I, particularly would call it a cake too, hahaha. But since here, in USA, it is called bread; let’s call it bread, LOL. Anyway, it is very delicious and very easy to make. You can serve it warm with butter, yummy!!! It is a wonderful complement with your afternoon coffee or tea.

Ingredients:

2 ripe bananas mashed

2 eggs

1/3 cup coconut oil

1/4 cup plain yogurt (I used whole milk yogurt)

1 cup sugar

1 3/4 cup self-rising flour

1/2 cup oatmeal

1 teaspoon ground cinnamon

1/4 teaspoon salt

1/2 cup chopped walnuts

Prepare:

  • Preheat oven to 350F. Grease and flour a loaf pan.
  • In a medium bowl lightly whisk the eggs. Add coconut oil, yogurt and whisk well. Add sugar and whisk until incorporated.
  • In a large bowl add flour, oatmeal, cinnamon and salt and whisk.

  • Add the wet ingredients over the flour mixture and fold with a wooden spoon just until combined.

  • Fold in walnuts. Do not over mix.

  • Place mixture into a loaf pan and bake for 45-50 minutes or until toothpick inserted comes out clean.

  • Let it cool on a wire rack, slice and serve. It goes well with an afternoon coffee 😊.
