Simply Risotto

Let’s talk about rice? How about Risotto huh? I love risotto!!! What a wonderful dish. In a big pot you place all ingredients and you can have a meal… The only trick thing here is stir constantly, so the rice will release its starch and will help to form a delicious and creamy sauce, traditional in a risotto. Risotto is a typical Italian dish, but very popular in several countries.

You can have different variations. Like chicken, shrimp, mushroom, etc.… almost anything in your risotto. But you must remember that you always need a good parmesan cheese on it. You can also add some extra cheese, like asiago, for example, and create a lovely and cheesy risotto.

Anyway, risotto is always a delicious dish, simple to prepare and make any lunch or dinner more special. Here is my suggestion to you, a simple risotto, but delicious!!! I hope you enjoy it!!!!

Here is my suggestion for you:

Ingredients: 

2 cups short grain rice

6 cups chicken or vegetable broth

2 tablespoons olive oil

4 tablespoons butter

1 medium onion

3 garlic cloves

½ teaspoon salt

Fresh ground pepper to taste

2 tomatoes diced and without skin

¾ cup frozen peas

4.5 oz. (127g) jar of sliced mushrooms (rinse the water)

½ cup shredded parmesan cheese

Basil for garnishing

Prepare:

  • Pour the broth into a sauce pan and warm it over medium heat. Do not let it boil.
  • In a large skillet, over medium-high heat, add olive oil and onions. Cook until the onions start getting transparent. Add garlic and cook until light brown.
  • Add rice and stir, until rice gets completely coated with olive oil. Cook for about 3-5 minutes.  
  • Start adding about ½ cup of broth into the rice and stir constantly until the liquid has been absorbed by the rice. Continuing adding more broth and stirring constantly.

  • Add salt and pepper, peas, and stir. Add more broth, tomatoes, mushrooms and stir. Continuing cooking rice and adding broth until rice is al dente. Will take almost 25 minutes.
  • At the end of cooking time, add parmesan cheese and butter and stir to create a creamy cheese sauce.
  • Garnish with basil. Serve warm and enjoy!!! 🙂
